Tasting Notes
The colour of Golden Syrup; good beading, indicating a thick texture. Marzipan and oak dust when rubbed on the hands. A soft, very rich aroma; rounded but vibrant. Fruity top-notes of caramelized greengages and apricots on a soft fondant base, with underlying scents of sawn oak. In time the caramel becomes fudge, and the fruits refreshingly tart. An appetizing nose. At natural strength the texture is smooth, but the taste is not as sweet as expected; the overall effect is tannic and warming. Water opens it up and increases the complexity of the aroma. There are now some dried herbs and spicy notes, less fruit; a trace of vanilla sponge and a promise of dark chocolate. The mouthfeel is now voluptuous, but still spicy and lively; the taste is sweeter, but far from cloying – indeed I would describe it as fresh – with a lengthy finish and raisiny-oaky notes in the lingering aftertaste.
