Single Malt
Single malt is the product of a single distillery and is made in batches from malted barley, water and yeast, usually in two copper pot stills. The individual character of the malts produced by the different distilleries varies according to the length of fermentation, the style and volume of the stills, and how they are operated. In Scotland, malts are always matured in oak casks which can themselves make a huge contribution to the flavour of the finished product.
